Disfruta de tu dia.

Can anyone clarify why we use "de" in this sentence?

Disfrutas del día.

The de is because you are using the intransitive form of disfrutar.

Our dictionary offers these examples:

.

disfruté mucho con el concierto -> I enjoyed the concert a lot

disfrutar de lo lindo -> to enjoy oneself very much, to have a great time

disfruto escuchándoles reír -> I enjoy hearing them laugh

espero que disfruten del espectáculo -> I hope you enjoy the show

.

I wonder if anyone knows when to use con as in the first example, or de as in the others.

I hear it often without the "de," e.g.,

¡Disfruta el día!

¡Feliz día!
