No entiendo el uso del "that" en esta oración.

Hi Peter, listen, don’t forget, we have that doctor’s appointment tomorrow.

I don't quite agree with Lorenzo, because I think it's very common to hear "don't forget we have that doctor's appointment tomorrow".

That one (referring to the appointment) that we made last week. Or: That one that we were talking about.

I never really thought about it, but I think it implies that both parties have prior knowledge...

Don't forget to read that book! ---means we've discussed this before and you know which book I'm referring to.

Se refiere a la cita, no al médico. ("esa cita", no "ese médico").

En esta frase, "doctor's" funciona como un adjetivo modificando a "appointment".

It's short for "Don't forget we have that doctor's appointment which/that I mentioned earlier tomorrow."

The sentence is correct and so is gintar's explanation, but in American English it would be more common to say:

Hi Peter. Listen, don’t forget that you have a doctor appointment tomorrow.
