Siempre he pensado que se debe decir "quiero que (infinitivo)" pero oía una canción que dice "quiero verte volar".

Es correcto o es differente porque es una canción?

(corrige mi español si no es correcto)

The main construction is "Quiero algo", where the noun "algo" is a noun working as a direct object. That noun can be replaced by any other word or phrase that behaves as a noun. One option is an infinitive clause (e.g. "verte volar"), which is regarded as a noun:

Quiero verte volar.

Another option is to use a noun clause with "que":

Quiero que vueles.

The usual "que" introducing a clause always demands a conjugated verb. Being a song has nothing to do with this. Questions?

Hi Felix

"verte" is an infintive. In Spanish one can add a pronoun to the infintive "ver"

I want to see you fly.
