difference between hombre and caballero

What's the diffeence between caballero and hombre? Ie, when would I use either one vs. the other? Thx.

Hombre es usado para diferenciar el género (man or male).

Caballero (gentleman) es alguien educado (moralmente), generalmente atribuido al comportamiento educado ante una mujer.
