¿Qué significa velar?
The dictionary entry says it means "to ensure", but the accompanying video entry says it means "to watch over". These are two fairly different definitions!

The dictionary actually lists many meanings of the verb, including "to watch over."
As in English, some words have more than one meaning. It's best to know how it is used in context.

to ensure everything gets done
to watch over the planning of the event. where you might be getting confused is you are taking to watch over as to take care of... but in english it can also be used to talk about watching over details, etc.
The word has evolve from Latin "vigilare" (from which "vigilar" also comes in modern Spanish). I'm sure you are familiar with the Spanish borrowing "vigilante" (literally, watchman).
