You could also say "Esquema de asentar."

I'm not sure. I'd wait for a native to answer, but my best guess would be:
mapa de la asignación de los asientos
which translates roughly to "seat assignment map/chart".

mapa de asientos is used on most of the airline sites for asignación de asientos.
