What is the difference between saying salchichas or embutidos?

All salchichas are embutidos, but not all embutidos are salchichas. "Embutido" literally means "stuffed", because traditionally, the meat was stuffed into the intestines of the animal (they still do it), but while in English anything like this is simply a sausage, in Spanish we have many words to differentiate between products with different flavours and styles.

  • "Salchicha" is supposed to be salted and peppered pork packed into a thin tube casing.
  • "Chorizo" is made with pork seasoned with paprika, wine and garlic, cured with smoke.
  • "Salchichón" is made with cured ham, fat, nutmeg and large amounts of pepper grains.
  • "Lomo" is loin of pork marinated with salt, nitrite, garlic, paprika, oregano, lemon and olive oil. Then it is cured and dried.

This is only a short list. There are dozens of products like these.

In Ecuador, salchichas are shaped like hot dogs and use finely ground meat; some are longer, many have plastic casings that have to be removed, and they aren't always made from beef.

There are other types of sausage available, such as mortadela, salami, and chorizo, but they differ somewhat from their American counterparts. There is nothing here similar to pork sausage links, Italian sausage, or kielbasa.

Chorizo is pork sausage.

Salchicha is a wiener or hot dog.

Embutidos are all types of sausages, salamis, etc., everything that is stuffed in a tripe

Thought I would add that in costa rica everything like that is called salchichón and can be anything from pork to chicken to god knows what, in sausage / hotdog format... But never say its like a hotdog or you'll get slapped LOL
