"El alto hotel" does not mean a high class hotel. If you wanted it to mean that the hotel is high in altitude, you would say "el hotel alto". So that expression is incorrect any way you look at it. Incorrect syntax for one, incorrect meaning.

No suena bien la expresión, para nada. Mejor usas tus propias sugerencias - hotel de alta calidad, hotel de lujo, etc.

To me it doesn't convey that idea, but rather a poetic way to refer to the altitude of the hotel.

It has a very slight sense of that but as lazarus suggests, it sounds more like you're talking about the altitude.

yo no digo nada más, en España ya lo ha dicho laza, no es más que la altura - 00494d19, Jul 17, 2011
