The googit counts prove that you're right, that many Spanish speakers do say Día de las Madres, but that doesn't mean it's the "official" way to say it. And many English speakers say Mothers' Day, but that is also "incorrect" according to informed sources. Check out this article:

So, either way is probably acceptable, but if the OP is looking for the "most correct" version, it's the singular.
Interesting. The plural form given by Gustavo gets 645,000 googits, while the singular form given by Patricia gets 1,380,000. Also, the singular is given by Wikipedia, so it would seem to be the correct form, even though the plural seems to be more logical.
Similarly, the correct form in English is Mother's Day, which seems to refer to only one mother, and not Mothers' Day, which would refer more logically to mothers in general or as a group.
Language isn't always logical!
