pelirrojo o rojo
When talking about hair color in Spanish, I've generally heard them say "rojo/a", in the lessons here they present the word "pelirrojo/a," which would be the more appropriate term or the most widely accepted term?

You say: Tiene el pelo rojo = she, he, has red hair
and Es pelirrojo/a = He, she is red-headed

In some regions, like Argentina, people say 'colorado', but as a nickname and as a slang
This football player is: Federico el "colorado" Lussenhoff.
It is more common to say "es pelirrojo" than it is to say "tiene el cabello rojo."
As a bonafide "pelirroja" I have been the subject of intense discussions about my hair color with my female in-laws.
There is another term that they apply to redheads, "rubias." I originally thought that "una rubia was a blonde," and didn't consider myself one. However, in usage, I have heard blondes and redheads grouped together as "rubias."
In conclusion, I consider a rubia to be a fair-haired woman.
