Apuntarse> In a more general sense, apuntarse means to be interested in something:

¿Te apuntas a un café? Do you fancy a coffee?

In essence, apuntarse means "to sign up" for something. So this is asking, 'would you sign up to have coffee', colloquially used exactly as described by both Jack and Lorenzo in the other answers. A similar example is sumarse - to add yourself, usually used when an activity is involved. "Oye, Jose, vamos al cine despues de comer, te sumas?"

I think ¿Te apuntas a un café? means something more like You want to have a coffee with me? or Join me in a coffee?. It could mean Do you fancy a coffee? but apuntarse would imply having that coffee with someone.

I think it means "Would you like to join me in having a cup of coffee?"

Ok, I think I get it, so can you say "te apuntas conmigo"? or "te sumas conmigo" like, voy a tomar un café, te apuntas conmigo? or te sumas conmigo?"

Gracias

I'm not sure if it is grammatically incorrect or not, but the conmigo is implied and redundant. Otherwise, great!. - shakedowndave, Jul 11, 2011
