¿Qué significa cenizas?
I'm translating a table of nutritional information. Most of the content is pretty much the same in Espanish as it would be in English but I'm struggling to translate cenizas, clearly I don't want to use 'ash'.
Any ideas?

Actually, in terms of nutrition, it probably would be "ash."
Dietary ash is what is left after a food has been incinerated and is mostly comprised of mineral content. Dietary ash is comprised of compounds that are believed to have biological activity in the human body.
If you google terms like nutrition along with "acid ash," "alkaline ash" and "dietary ash" you should be able to find more information on this term.
I can give you Spanish synonims translated. BE CAREFUL with the context of the sentense! Examples:
-Hollín: Soot.
-Resto: Remaining
-Residuo:Residue
Singular; Ceniza=Ashes Plural; Cenizas
"Dónde hubo fuego cenizas quedan".

If, for aesthetic purposes, you did not want to use the term "ash" you could probably also use the term "mineral residue." Even so, "ash" is probably by far the more common term.

In polypeptides and proteins, the amino acids that comprise such molecules are often referred to as "residues," but this is not very common in terms of nutritional labeling and they certainly would not be referred to simply as residues (instead, specific amino acids would be listed such as L-alanine, etc).
Chemically speaking, such residues are a result of dehydrations synthesis in which two separate monomers join by losing a molecule of water, hence the term residue.
