"Que lindo sos/que lindo que sos"
So, for this kind of comment, que lindo sos/eres...would you say que lindo sos, or que lindo que sos? I've heard both ways..are both correct? If so...is one used in a different situation than the other, or what? Muchas gracias!

¡Qué lindo sos! should suffice to be grammatically correct. It has a subject/ verb /complement.
How lovely you are! (more common in English)
How lovely that you are! (looks odd...it appears to be a main clause with no verb/subject, then a subordinate clause, or just one long sentence fragment «that you are how lovely» However, we use sentence fragments in conversations all of the time. I would not call it incorrect. I can't speak for the Spanish version, but the English one wouldn't cause a blip on my radar if I heard it.
