¡Chévere! Cool?
Can someone give me some examples of how this word is used in the Caribbean?
Is it basically the equivalent of "cool?"
For instance, someone texts me and says, "voy al gym cerca a las 6 de la tarde"
y le quiero responder así, "Chévere. Te veré allí."
¿está bien así?

One thing we must keep in mind is that all these words are considered 'slang' and as such, they may have slighthly different meanings in different countries.
"Chévere" - pretty much a global way to say 'cool' "Bacano" - I have heard people in Colombia using this word. In Perú, for example is know as "bacán". "Chido" the equivalent but only in México "Padre" same as 'chido'.

''Cool'' is one word that the Caribbean has adopted from the USA along with many others such as ''Duh''. The use of these words are universal though. They would be used the same way in any part of the world.
When someone uses the word ''Cool'' they usually mean:
1) Yes, I agree
A: We are going to eat and then watch a movie.
B: Cool man. / Ok, cool.
2) That is awesome
A: My phone can tell you the location of the stars. Watch and see!
B: Wow, cool.
3) A person is really easy to get along with, interesting or fun.
A: I like hanging out with Chris. Every time we go out together we enjoy ourselves and he makes me laugh.
B: Yes, Chris is a cool guy.
I can't think of anymore examples for now but, when I do I will add them.
