One thing to keep in mind is, if the señor is Sir, then it is not capitalized:

Estimado señor: (Dear Sir)

When you get down to the first line of the letter, here are some useful expressions used in letters.

Coffeelate is absolutely right.

I think if you have close, rather "informal" relationship with Mr. Smith, you can also say "Querido Señor Smith".
