Hola.

If you wanted to say you were allergic to something, you would use "ser", correct? So if you wanted to say, "I am allergic to peanuts", you would say, "Soy alérgica a los cacahuates."

What if you were talking about medicals conditions? If you were to say, "I am diabetic", you would say, "Soy diabética", correct?

I'm just not sure because I don't know if these conditions are "permanent", so to say.

Being permanent or temporary does not necessarily determine whether you use ser or estar, since you can find thousands of exceptions. The rule that works is that "ser" identifies and classifies (or even defines, if you want). In other words, you use "ser" to tell what someone or something is; it is like an equals sign (=). Both "diabetic" and "allergic" describe what you are, whether it is permanent or not.
