It seems servicio doesn't work here for service.
El servicio fue terrible. The service was terrible. They left the restaurant without paying because the service was terrible.
Se fueron del restaurant a causa de que el servicio fue terrible.
This was not understood by my Mexican workmate. She didn't understand servicio in the sentence. I wonder what you would say?

Your co-worker may be one of a kind, I would have to say... servicio is pretty common and widely understood/acceptable in that context... let's see what others may say. For poor or terrible, I may suggest the following terms:
pésimo/a, fatal, =o= malísimo/a

That "a causa de que..." is a bit of a mouthful. "Se fueron del restaurante porque el..."

I don't really see the problem, but I personally use "el servicio" more like "the (attending) staff". Maybe you can try with:
Se fueron del restaurante porque les atendían muy mal.
She might understand better if you were to say "......... les atendieron terriblemente mal."
Maybe if you added "al cliente" it would be clearer to her.
