What are the differences between each article?

For instance, if I want to say "the eggs" I have to say "los huevos" or "las papas" for potatoes. What does the other articles represent, such as "una" and "uno", "ellas" and "ellos"?

una, un, unas, unos are the indefinte articles (a, an, some)

ellos and ellas are not articles, but pronouns.

In Spanish, all nouns are either masculine or feminine which decides which article they take. You can find out which words are masculine or feminine by looking them up in the dictionary.

Los huevos is used because huevos is a plural masculine noun. If it was singular it would be el huevo. Las papas takes las because it is a plural feminine noun. If it was singular it would be la papa.
