When saying 'I like you' why can't we use the verb 'Gustar'? What if I say 'Me gustas ti' or 'Me gusta' or something?

You can, but it's Me gustas a mi. And it means "You are pleasing to me". It would be taken with romantic connotations. - Goyo, Jun 4, 2011
