Is this correct? ".. fue rico"?
I've got a mind block and can't figure out what to use for, " it was delicious" (regarding food) in the past tense. Am i being stupid or can you use fue because would that not mean it went delicious?
"Ceñé atún, fue rico" ?

Fue is the 3rd person preterite for both "ir" and "ser" soo it would be correct.
I think this case you would want to use estar for the food, and fue for the event.
Fue bueno comer contigo ayer. El atún estuvo/estaba rico (delicioso, sabroso, etc.)!
I honestly always have trouble with imperfect/preterite with a question like this. I think they can be interchanged, but I can't tell you why. Help?
Ser and ir are conjugated the same in the preterite tense.
