"To Be Nice" - Estar or Ser
Would I use "estar" or "ser" for the phrase "to be nice"?

It would be:
Eres amable. (ser informally)
Es amable. (ser formally)
Unless you are talking to a normally mean person:
Estás amable hoy, ¿por qué? (estar informally)
Nevermind; it's ser - "Ser amable." Love answering my own question, haha.
