"Skull" is "una calavera," as qfreed mentioned, but only in the sense of a symbol for danger or the macabre. (For example, the skull and crossbones). The skull-shaped candy used for Day of the Dead are called "sugar skulls" or "calaveras de azúcar."
The scientific/medical term for skull is "cráneo."

Gintar is right. In Mexico, we call them "calaveritas de azúcar".
We use to fix the name of our friends on them, and give them as a present to them on the Day of the Dead (November 2nd).
