How to say: to take notes

There are many "to take" verbs, and I'm not sure which is the most correct to use, tomar maybe?

Tomar notas o tomar apuntes. Both are correct.

Tomar nota, but don't use "notas", I don't know why but that's not plural

In the context of school and taking notes, I think notas = grades, although that's not the only definition for the word. - babs_irish, May 25, 2011

Well, notar is to notice, anotar is to take note. Although our dictionary does list "to note" as a defination of notar I have never heard it that way. - jeezzle, May 25, 2011

I don't know. ¿Anotar notas?
Do they all work? Do they have special meanings? I don't know if some have special meanings.
