La fuente de agua es mejor para ver durante la noche.
What I'm trying to say there is " Its its best to view the fountain during the night." Anything wrong with the above??

I'll take a shot:
Es mejor ver la fuente de agua durante la noche.
Do you need "de agua" following fuente to show a fountain of water? I don't think so but I guess it can't hurt (and maybe you do who knows)
No para between between "mejor" and infinitive.

My suggestion would be:
Lo mejor es ver la fuente por la noche.
(but I'm still learning too so I should wait for confirmation
