In this context, both verbs mean the same. In Mexico, I am used to hearing "dobla a la isquierda", but I think "gire a la isquierda" would be perfectly correct.

But these verbs have other, different, meanings. For example, "Girar" can mean "To Spin", and "Doblar" "To bend"

Gire a la derecha or gire a la izquierda. You can say doblar too.
