I am writing a thank you letter in Spanish to a Colombian family I stayed with while visiting the country.

I was wondering what I should start and end the letter with (what would have been dear & sincerely in english). I became very familiar with the family so I'm looking for something informal and personal

(I'm not looking for direct translations to dear and sincerely just Spanish alternatives) If you think of a word that uniquely Colombian that would be even better.

I think you can go with:

Queridos amigos: .......

Os echamos mucho de menos.

Os mandamos muchos abrazos y esperamos veros pronto.

That's a good question. I think Querido or querida is for dear. But wait for someone more advanced.
