My book says that you always use imperfect tense (quería) with verbs that show thought process or desire (wanted). so when would we use quiso?

The difference is very important: querer is one of the verbs that changes meaning with respect to English in the imperfect vs. preterite as well as affirmative vs. negative. If you use the search feature, you will find many discussions of this.

The difference it´s not very important. Ella quería ir de viaje. Ella quiso ir de viaje. Para mi es lo mismo.
