"Dios" in all caps.
I have some friends, and every time they say something like: "God bless you," they put DIOS (or GOD) in all capital letters. Is there some reason, maybe a religious reason, behind this???

Not really. Writing God or Dios with initial capitals is recommended when your god is "the God", i.e. when that's a name you use to refer to this god and not to just any god. But writting the whole word in capitals is, at best, shouting in the Internet. Most likely, it is a matter of ignorance about orthography, or simply carelessness or complete lack on interest in following protocols.
As a practising Christian, who attends an evangelical church in England, I would use capitals for the initial letters of God: Dios,Jesús Cristo o el Espíritu Santo to show respect my the Lord who is my Saviour but I not see any need to use capitals to write the whole word and agree with Lazarus that it could be construed as shouting.
It seems a strange practice that your friends are using. i would, in your position ask them why they felt the need to do this.

I'm a Bible student and attend a bilingual church. I am not aware of any tradition to place "Dios" in all capital letters. Your friends may be trying to place a reverence on the word "Dios" but it is not normally written in all capital letters.
