What purpose does the "se" serve in this sentence? How is it different than if it were just "respetar"?

"Van a respetar las tradiciones" means "They are going to respect traditions", so the subject is "they", a group of people that in Spanish is definite and understood. In "Se van a respetar las tradiciones", traditions are going to be respected, but "se" conceils the people responsible, effectively turning the sentence into passive.

No, it is grammatically wrong. You can say "Todas las religiones se van a respetar" (passive), or "Todas las religiones van a ser respetadas" (a less common version of it)
