You wrote "la disfrutaste", and since it is indicative, you are telling the other person with this phrase that he/she did enjoy the meal. Saying that you hope that something you declare as a fact happened is weird. This is why we use subjunctive.
If you wanted to write it using the present subjunctive you could say;
¿Cómo fue la comida? Espero que estés disfrutando de la comida
o
or using the past subjunctive you could say:
¿Cómo fue la comida? Espero que hayas disfrutado de la comida

I think that the sentence is just wrong as worded.
A proper way to ask would be: "¿Cómo fue (estuvo) la comida? Espero que la hayas disfrutado"
¿Cómo estuvo la comida? Espero que la hayas disfutado.
("¿Cómo fue la comida? is a tad...off, in my opinion; it's more akin to asking "¿Cómo es la comida?" which would imply how it is shaped, what's its color, what's the texture; "como estuvo" is the past of "como está" which denotes how it tastes, was it satisfying, enjoyable, not enjoyable, etc.)
