In the sentence (Recuerdo lo aburrido que era el curso) why is era in front of el curso, it seems like it's saying was the course.

I remember how boring the course was. Era = was. I'm not sure I understand your question, is it "Why is Spanish not worded exactly the same as English?" to that I answer, that each language is different.
