What determines the conjugation of Venir in this case is the thing, not the person(s) just as Gustar is conjugated.
I could do with some help - Me vendría bien un poco de ayuda
Perfect.
You could do with some sleep - Te vendrías bien que dormir
I don't know about other countries, but in Spain you have to say "Te vendría bien dormir", where "dormir" is the grammatical subject.
They could have done with a beer - Se han vendrido una cerveza
Too literal. In Spain we'd have said "Podrían haberse tomado una cerveza", or else.
We had been doing nicely without you - nos habrían estado vendido bien sin tí
Your translation sounds totally unacceptable and unrecognisable. Try "Nos habíamos apañado sin ti".
I could do with a chocolate bar - no me vendría mal una chocolatina tongue laugh
This one looks good.
