I have checked the translator here and in other suspects for this, If I use the definition of the translator, the recipe has no sense. It is a cooking term. What does it mean?

sancochar.

  1. tr. Cocer la comida, dejándola medio cruda y sin sazonar.

The meaning is as Julian indicated: essentially, to cook in water. Something dry and toasted is definitely not sancochado.

That is a sancocho. I's a rich soup that cen be made with various roots, corn, green plantain and beef, chicken, fish, a mix, or all-vegetable. It is truly delicious and satisfying. :-) - Gekkosan, Mar 14, 2011

To me sancochar is mainly used when talking about meat. Instead of toasting meat you boil it since there's too much water in the pan. I've never heard sancochar with veggies, just meat
