How do I choose between "en", "sobre", or "encima de"?

For example, "The cat is on the table". Which of the following is acceptable:
El gato esta en la mesa.
El gato esta sobre la mesa.
El gato esta encima de la mesa.

El gato está en la mesa. The cats is on the table ("en" can mean "in" so context is necessary).
El gato está sobre la mesa. The cat is above the table (maybe jumping across and above it or on a ladder looking down on it, sometimes on top of it).
El gato está encima de la mesa. The cat is on top of the table.
