I hear this a lot in a show I am watching. Oysters! Is this really used? Is it only used in Spain? What about Mexico? Gracias.

It's one of those euphemisms. It comes from Hostia which is the host the Catholics swallow at mass if they have been to confession. Being sacred, considered to be the body of god, it was once seen as blasphemy to "take the name in vain".
It's meant to avoid blasphemy in the same way that the cockney "Gor Blimey" was used instead of "God blind me".
So it's a "polite" way of swearing like somebody saying "Feathers!" instead of "F***!"
