Also if I am refering to my uncle and aunt, can I say Los Tíos?

Yes. The masculine form is use as a collective noun. Mis hijos, mis tíos, mis primos, mis abuelos, mis sobrinos, etc.

Also, the word for relatives is parientes, which should not be confused with Parents.

Yes. My children specifically is mis hijos. Also, los abuelos for grandparents, los amigos for friends, etc. If there is at least one male in a pair or group, the gender automatically becomes masculine.
