You would know by the meaning of the words:

muy = very (adverb) and mucho/a (adjective) = much

and above all, the context will determine when to use the words and when it would not be appropriate to do so

Por ejemplo: ¿Cómo está Ud? =How are You?

Estoy muy bien, gracias = I am very well, thank you

You would not use mucho here as it would not make (as much) sense in this context

Tengo mucho dinero = I have a lot of money (literally: much)

Dinero is masc so mucho must match it and be masculine!

You would not use muy =very as it would not make any sense here either

I hope that helps grin
