What is the difference between todo and toda, if any?

Well, you use "todo" before a masculine noun and "toda" before a feminin noun, also "todo" means "everything", which doesn't need a gender.

Quiero todo = I want everything

Quiero toda la comida = I want all the food

Quiero todo el dinero = I want all the money

If it stands alone, you use todo. If it describes a noun, it has to agree; comida is feminine, so you use toda. Dinero is masculine, so you use todo.
