...does cumpleanos and septimo need to be changed to the femanine form, in the sentence :" Mi fiesta de cumpleaños de septimo." ? in need the sentence to be femanine

I guess you mean "My 7th birthday party." It would be "Mi séptima fiesta de cumpleaños". Fiesta de cumpleaños is feminine (because of fiesta), so the adjective will follow its gender (séptimo => séptima). Cumpleaños won't change in gender: it can be singular or plural depending on how many birthdays are being talked about (el cumpleaños (1), los cumpleaños (more than 1 birthday)) but it is always masculine.
