Going out on a limb here, but "panqueque" is pancake in parts of Latin America, so maybe "panquecito" is "little pancake?" Just guessing, but I do like that comment about it also being a nickname or term of endearment...

"little bread" is the closest literal translation. It can indicate several things ,from a nickname to a bollilio.
