How do I tell a waiter "We would like to have..." and give them my order. I want to be polite, but not over the top.

You could say "Nos gustaría" or "nosotros quisiéramos".

Tell him simply:

Quiero....

Queremos.....

And don´t forget to add at the end "por favor".

Or else, you could ask directly what you want. For instance:

Dos helados, por favor.

Or:

Dénos dos helados, por favor.

If you want to be even more polite, you could use the subjunctive form :

Quisiéramos dos helados, por favor.

Or the imperfect :

Queríamos dos helados, por favor.

My friend from El Salvador says that "quiero/queremos" isn't polite. He is in his late 30s. Nos gustaría is better. I wonder if podríamos tener is another way (could we have an order of corn tortillas please)???
