How do you say, "it"? As in, playing hide and seek and you're it?

In Spanish, the game hide-and-go-seek (from what I have seen) is usually called la(s) escondida(s).

The person who is "it" (i.e. the person who does the chasing/searching), as far as I know is usually referred to as the buscador.

I would just note that I have very limited experience with this game (in Spanish) and it may be that other terminology also exists (and I welcome any corrections). In any case, if you have any doubts, you might try searching the web with something like:

"Reglas para jugar a la(s) escondida(s)," "Cómo jugar a la(s) escondida(s)" or "Cómo se juegan la(s) escondida(s)."

Edit:

I just found this link which also lists las escondidillas, escondijo, escondecucas, and escondido as names for this game used in various regions. You might try a search for some of these along with the keyword "reglas."

According to experts from Latin America, they just said "te toca". smile They called the game "tuja de esconderse", but there are other names too, of course.
