As in the phrase, ''me gusta estudiar'' Would I say, ''me gusta beber'' or '' me gusta bebo''

Me gusta + infinitive [of any verb]

You have to say "Me gusta beber". If you say "Me gusta bebo", what you are saying is that you like the verb form "bebo", i.e. "I like 'bebo' (it is a nice word)".
