Why does "recuerdos" mean, my love or my best here, and not memories or mementos or somthing? Dále recuerdos a mi papá de mi parte.

Give him/her my regards.
If you think of it, "to regard" means to consider carefully something in order to have an opinion, so what on Earth does "send your regards" mean? Send your considerations or opinions about them? You are over-analysing again! Get things in context; don't use literal translations.
