(how would I write the "myself" part in the sentence)

Si lo hubiese adivinado yo mismo/a, habría dicho: "Aquí no se sirve café"

The dashes are not used for quotes like that in Spanish.

Also the translation for the last sentence could be:El café no está servido aquí or Aquí no se ha servido café, but if you wrote it in the sense of "we don't do it" I guess your sentence is correct and lazarus's also.
