How woud I say "chopped chicken" in Spanish? The word chopped is the preterite of the verb to chop but in this sentence the word is acting as an adjective, how would I say chopped as an adjective?

The word chopped is English and English has no preterit. You want a Spanish participle. Participles share characteristics of verbs and adjectives. The link to verb conjugations on the bottom left of this page will give you all verb conjugations plus imperative forms, gerunds and participles.

Pollo trozado ir correct but not accurate. Pollo cortado en cubos is more accurate to the expression in English
