"What is the defination of Creole/"
The book definition of creole is a person is was born in a colony from "pureblood" parents from the colonizing nation. "Mestizo" is one of mixed blood; European and native. I am descended from creole French Canadian ancestors. If there is some Native American blood in my background I would (and may) be métis, (in Francais).
I would like to know from our Latin American friends what "creole" means to them. In the USA, "creole" means, in common terms, anyone who is descended from French forbearers, whether intermarried with Native Americans or not. The first leaders of Green Bay, WI. were called both creoles and métiz because they were born in America and were of mixed blood. I am proud to be a creole. I would be prouder still to be considered a métis.

While you are waiting for the responses you want from Latin Americans, you might be interested in reading about what creole means to linguists or what criollo means to Peruvians. Wikipedia is a good source. The French Canadians, Acadians or Cajuns were not creoles. The creoles of Louisiana were/are any mixture of French (not French Canadian), Spanish and African.
