Tu frase no es incorrecta y no nos sonará ni mal ni rara, pero es mucho más probable que digamos "caffeine-free coke." De hecho, una de las únicas veces en la que normalmente usaríamos la frase "a coke without caffeine" sería cuando explicáremos lo que significa "caffeine-free coke."
Your "phrase isn't wrong, and it doesn't sound bad or weird, but it would be much more likely that we would say "caffeine-free coke." In fact, one of the only times that we would use the phrase "a coke without caffeine" would be whenever we would explain what "caffeine-free coke" means.
Por favor, ¡corríjanme el español!

That's not to say that we would never say "a coke without caffeine" in other situations...only that we don't normally choose that phrase. If you did say it, in any situation, it would not sound odd at all. It is correct.
Yes, that's right. You can also say "a caffeine-free coke".

Yes ... I suppose so. That is what I would say (en voz alta) but I've never actually said it. I have seen things like .....
Caffeine free coke
Sugar free chewing gum
Tax free investment
... but your sentence sounds better to me.
what about coke descafeinado? I've seen café descafeinado in my textbook so would it work with coca cola too?
