Yeah, it's best to think hard about what you really want to ask. Often a word or phrase can have multiple meanings but the questioner has a specific thought in mind when asking their question.
If you mean take it easy as in 'chill Winston', 'calm down' etc. then I'd go for ¡Tranquilo!, maybe followed by marica or huebón.
If you mean take it easy as a parting gesture then I'm sure that you'd find a veritable plethora of responses varying by country and region, just as you would in English.

In my opinion, this varies depending on the context. Do you mean: "Take it easy", as in "relax/ don't sweat it", or "take it easy" as in "Hey, have fun, see you, take it easy"!! Do you see what I mean?
