To say "un filete de ternera", which of these words are correct?

A beef steak

Let's get real. No one says beefsteak. It's just a steak. I have never heard beefsteak in my life. Gimme a beefsteak. We say gimme a primerib, gimme a ribeye, a T-bone, gimme a filet mignon. A cut of beef, a steak. No one says beefsteak. Who says beefsteak? Nobody.

Calves are the young of cattle,and
Cattle are mature beef cattle
Los beceros dan carne de ternera, y
El ganado dan carne de vaca
Calves give us veal cuts (baby beef),and
Cattle gives us beef cuts
Para mi, un filete de ternera = a veal steak,y
A beefsteak = un filete (o bistac) de vaca (o de res)
For me, un filete de terners = a veal steak, and
un filete (o bistec) de vaca (o carne) is a beefsteak.

The only person I have ever heard say beefsteak was my Spanish teacher, who was originally from France. (!) Jeezzle is right, not something you will hear very often (if ever).

In my area we call a piece of veal, a veal cutlet. This would be tender beef from a young animal.

A steak is a piece of beef from a mature animal.

A larger piece of beef from a mature steer is called a roast of beef or a beef roast..

This may just be how I use the term, but to me "steak" is always beef, so to say "beef steak" to me is redundant. If the steak is other than beef, than a qualifier is added, as in your "veal steak". I'm a born and raised Mid-westerner (US), so this may be a regional interpretation.
